- 3-4 cup red potatoes
- 1 tablespoon olive oil
- 2 clove garlic, minced
- 2 teaspoons dried oregano
- 1/2 cup (vegetarian) parmesan
- 2 tablespoon fresh chives
Directions:
- Slice red potatoes into roughly 1/4″ thick slices.
- In a large skillet, heat oil over medium heat.
- Add in garlic and potatoes and saute until potatoes begin to soften, Sprinkle in cheese and oregano and continue to cook until potatoes begin to brown on both sides, 15-25 minutes (depends on the thickness!)
